KOYU LONDON has developed one of the world’s first Wagyu Infused Vodkas, combining traditional distillation with an innovative fat-washing process inspired by the finest Wagyu beef. The result is a spirit unlike anything else on the market - luxuriously smooth, exceptionally refined and impossible to compare.

    Beginning with a triple-distilled British wheat spirit.

    fat-washed

    The infusion

    We infuse the vodka with premium Wagyu tallow, allowing it to absorb the delicate buttery notes, rich mouthfeel and subtle umami unique to Wagyu.

    −27°C

    for seven days

    The rest

    The spirit is then rested at −27°C for seven days, before the fat is meticulously removed, leaving behind only its refined flavour and signature velvety texture.

    The filtration

    Every batch is then triple filtered using silver, activated charcoal and precision polishing filtration, producing exceptional clarity, remarkable purity and an incredibly smooth finish.

Frosted glass, finished in gold. On the face, veins of gold run through the glass like marble. Turn it, and an ink-wash panorama carries Mount Fuji, a torii gate and a cherry tree in blossom to the Thames - Tower Bridge and the Shard on the far bank.

    Cool to the touch, soft to the eye. The glass holds the light rather than throwing it back.

    The veining echoes the marbling that Wagyu is prized for. No two lines repeat.

The origin of KOYU

The story of KOYU London begins far beyond a brand.

Founder Jacob comes from the world of British Wagyu farming - an industry built around patience, precision, genetics, nutrition, and exceptional quality.

Through years immersed within Wagyu farming and luxury food production, a deeper understanding emerged around the remarkable natural qualities found within Wagyu tallow and the philosophy of respecting every part of the animal.

Inspired by Japanese culture, craftsmanship, and rituals of balance and longevity, KOYU LONDON was born.

Not simply as a brand - but as a modern luxury house built around nature, innovation, and heritage.

The founder still farms: Wortley Wagyu (opens in a new tab), in the South Yorkshire countryside, since 2020.

    The Koyu serve

    Neat · 7°C

    Lightly chilled at approximately 7°C, in a small glass. Nothing added. This is how its texture and character show at their very best.

  2. 02

    Over ice

    One large cube

    A single, clear block of ice in a heavy tumbler. Slow to melt, so the pour stays itself.

  3. 03

    The martini

    Stirred · Very dry

    Koyu stirred long over ice with the lightest measure of dry vermouth. Strained cold. A twist of lemon, expressed and discarded.
